October Conference '11

Our church held its semiannual General Conference this weekend. I approached Conference seeking specific guidance. We have some big decisions to consider as Scott graduates next year, so I listened to the messages with that in mind. I received some fantastic direction that I'm applying now.

President Uchtdorf's "Forget Me Not" talk also touched my heart: "...Wherever you are, whatever the circumstances may be, you are not forgotten. No matter how dark your days may seem, no matter how insignificant you may feel, no matter how overshadowed you think you may be, your Heavenly Father has not forgotten you. In fact, He loves you, with an infinite love."

Of course, Conference weekend meant lots of family time and tasty food! Scott took those days off of studying (after two grueling weeks of midterms), and we loved seeing him more. We lounged in our pajamas all morning, talked, laughed, read books, baked cookies, played, and went to the park.

To top it off, we enjoyed a lazy Sunday morning with an Amish breakfast casserole, red grapes, and orange juice with extra pulp.

Amish Breakfast Casserole

Ingredients:

  • 1 pound sliced bacon, diced
  • 1 medium sweet onion, chopped
  • 6 eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded Cheddar cheese
  • 1 1/2 cups small curd cottage cheese
  • 1 1/4 cups shredded Swiss cheese


Directions:

1. Preheat oven to 350 degrees.
2. Sautee onions and bacon. Combine in a large bowl with additional ingredients.
3. Pour into a 13" x 9" baking dish. Bake 35-40 minutes.
